Perhaps pineapple salsa might sound odd at first sight, but if you give it a second thought, you’ll find it yummy. It is a mix between sweet and sour, and sometimes it can even be spicy.

Ingredients:

  • 3/4 Cup diced Pineapple
  • 1/4 Cup Red onion
  • 1/4 Cup Tomato
  • 2 Tbs Cilantro
  • 1/2 Lime
  • Olive oil, drizzled
  • Salt, as desired
  • Pepper, as desired
  • 1/8 Cup Jalapeño, if using
Warning: If following a FODMAP diet red onion cannot be added to the salsa

Instructions:

  1. Diced the pineapple, tomato, red onion, cilantro, and jalapeño (if using), and measure the quantities.
  2. In a medium serving bowl, combine the pineapple, tomato, onion, cilantro, and jalapeño (if using). Add the juice of half a lime, salt, pepper, and a drizzle of olive oil and stir to combine.
  3. Season to taste with additional lime juice and/or salt if it doesn’t taste amazing just yet.
  4. For best flavor, let the salsa rest for 10 minutes or longer before serving. It’s best served fresh but keeps well, chilled, for up to 3 days.
